Home Made Vegan Luna Bars

LUNA is a Clif Bar & Company brand that was started by the company’s female employees, in the 1990’s, for a female consumer base. Its main selling point was that each bar had fewer than 200 calories.


Although Nutri-Bake produces these with its own alternative formula and in high

volumes for our private label customers, we have created a simple home-made vegan

recipe for you as follows:

  • 3 cups Rice Crispies or for a less-crispy bar, you can substitute 2 cups of the

  • Crispies for 1/2 cup Oat flour).

  • 2 teaspoons pure vanilla extract

  • 1/2 teaspoon sea salt

  • 1/2 cup or 2 tablespoons nut butter (or coconut butter for nut the averse)

  • 1/2 cup sticky sweetener such as agave syrup

  • 2-3 tablespoons protein powder (optional)

  • Melted chocolate chips (preferably unsweetened)

Mix the above, except the cereal and powder, then melt (either in the microwave or

stove), then pour over the cereal and powder, and stir very well, making sure to coat

all the crispies. Smash the crispies. Line a pan with wax paper and spread the

mixture evenly into the pan. Place a sheet of wax paper on top of the mixture, then

press down as firmly as you can. Spread the chocolate on top and freeze for at least

a half hour before slicing.


The nutritional information for these will vary depending on what protein powder and

chocolate sauce you use.
